Recipe: Spinach and Ricotta Pastries

Since our usual weekly shop is done on a Monday, I had to muster up a lunch from items we already had in the fridge. These pastries are really easy to make and are super filling. They’re only 100 cals each too!

WHAT YOU’LL NEED

  • Ricotta Cheese (100g)
  • Large bag of Spinach
  • Jus Rol Pastry (or any other alternative)
  • Fry Light Garlic 1 Cal Spray
  • Seasonings (Salt, Pepper, Garlic Herbs)

METHOD

Preheat the oven to 200 degrees (fan assisted)

Firstly, wilt the spinach. I do this by adding all the spinach into a deep cullender. I then pour boiling water over the leaves until they’re fully wilted. Once this is done, add the spinach into a bowl with the ricotta. Using a knife and fork, mix the two ingredients together until they’re a soggy and ugly mess. At this point, add salt, pepper and garlic herbs to the mix for some flavour.

Once you have the mixture, grab an oven safe dish and spray up to 5 pumps of the 1 cal spray. Rub the spray around the dish, making sure all of the dish is covered.

Next, roll out your pastry and section it into 5.

How dodgy do those sections wanna be?

After this, section off the pastry strips and start to add the “filling”, like below:

Once this has been done, roll up the pastry so it resembles a depressing chocolate log, and place it into the dish. After all five rolls have been made, chuck the dish into the oven for around 25-30 minutes until the pastry is golden and thoroughly cooked.

Add salt and pepper over the pastries before they’re placed into the oven in order to give the pastry a nice flavour!

FINALLY, ENJOY!

Enjoy the pastries with some sundried tomatoes, or lob them on a plate and devour them within 5 minutes like I did…
